Pork Adobo with Potato

INGREDIENTS:
a. 2 lbs pork (sliced into cubes)
b. 2 medium potatoes (cubed)
c. 1/4 cup vinegar
d. 1/2 cup soy sauce
e. 5 cloves crushed garlic
f. 3 pieces dried bay leaves
g. 1 tbsp whole pepper corn
h. 1 cup water
i. 2 tablespoons cooking oil
j. Salt (to taste)

 

PROCEDURE:
1. Heat oil in a pan.
2. Saute the garlic for 30 seconds.
3. Add the pork and whole peppercorn.
4. Cook for 3 to 4 minutes.
5. Pour-in soy sauce and water.
6. Add the bay leaves and let boil.
7. Simmer (covered) for about 40 to 60 minutes (add water if needed).
8. Put-in the vinegar and allow re-boiling.
9. Add the potatoes.
10. Simmer for 10 to 12 minutes.
11. Add salt
